Deconstructed Toffee Pudding

deconstructed sticky toffee pudding with golden raisins, caramel, creme anglaise, raspberries, whipped cream and chocolate coated spoon

Ingredients

Pudding batter of flour, butter, eggs,
baking powder, baking soda, vanilla extract and salt.
Golden raisins
Apple juice
Toffee sauce
Créme anglaise
Whipped cream
Raspberries
Chocolate

Preparation

Soak raisins overnight in apple juice
Beat butter and sugar, add eggs and vanilla, continuing beating until smooth.
Add dry ingredients. Cook in convection oven for about 10 minutes.
Prepare caramel with sugar, water, lemon juice and heavy cream.
When firm, add a tablespoon of caramel sauce and cook for another five minutes. Cool.
Make créme anglaise with half and half, whole milk, egg yolks, sugar and brandy.
Whip cream.
Melt dark chocolate and dip spoon to coat.
